Description: An egg yolk is the yellow part of an egg known more formally as albumen or ovalbumin. As a food, egg yolks are a major source of vitamins and minerals. They contain all of the egg's fat and cholesterol, and almost half of the protein. Egg yolks are indeed full of cholesterol. Like most cholesterol-rich foods, they are jam-packed full of important nutrients, especially the fat-soluble vitamins and essential fatty acids. Egg yolks can resolve most common nutrient deficiencies as it contains the majority of the copper, nearly all of the calcium, iron, folate, and B6, and 100% of the vitamins A and E.

If left intact while cooking fried eggs, the yellow yolk surrounded by a flat blob of egg white creates the distinctive sunny-side up form of the food. Mixing the two components together before frying results in the pale yellow form found in omelettes and scrambled eggs.
