Other Names: Petroselinum crispum

Description: Parsley is used as a spice all over the world is a bright green, biennial herb also known as Petroselinum crispum. It is originated in Iran ("Pars"); it thus acquired its European name. It is very common in Middle Eastern, European, and American cooking. Its is used in the same way as coriander (Chinese parsley or cilantro). Parsley is the world's most popular herb. The delicious and vibrant taste and wonderful healing properties of parsley are often ignored in its popular role as a table garnish. Highly nutritious, parsley can be found year round in your local supermarket.

Medicinal uses:

Tea may be used as an enema. Chinese and German herbologists recommend Parsley tea to help control high blood pressure, and the Cherokee Indians used it as a tonic to strengthen the bladder. It is also often used as an emmenagogue.

Parsley also appears to increase diuresis by inhibiting the Na+/K+-ATPase pump in the kidney, thereby enhancing sodium and water excretion while increasing potassium reabsorption.It is also valued as an aquaretic.

When crushed and rubbed on the skin, parsley can reduce itching in mosquito bites.
